Great Lakes Seaway Trail & Vegan RV Cooking


As soon as the Lake Erie Coastal Ohio trail ended, the Great Lakes Seaway Trail immediately started at the border of Ohio and Pennsylvania. As I traveled into Erie, Pennsylvania, I stumbled upon Presque Isle State Park and ended the evening at a Walmart and settled in for some vegan RV cooking.

I stopped for a moment to get my barings and make sure I knew where I was headed.

This is my last day in Pennsylvania as I start the Great Lakes Seaway Trail that travels through Pennsylvania and New York along Lake Erie, Niagrara Falls, Lake Ontario, and the St Lawrence River for approximately 520 miles.

This post and video covers day 1 in Pennsylvania and Presque Isle State Park sightseeing.


My first big sightseeing on this day was Presque Isle in Erie, Pennsylvania.

Staying on 5 or Alt 5 going East was the road to travel and my first stop was Presque Isle State Park.

Okay, here I am again saying how I should research more before I travel to a new area. Had I known how amazing Presque Isle State Park is, I would have figured out a place to stay nearby in the park. They do have RV parking inside, but it was super packed!

This was one of my favorite state parks with so much beauty and lots of outdoor activities. I couldn't wait to show you the pictures and video.

Then it happened.


A huge fail since the park is so beautiful with lots of outdoor activities, trails, rental equipment, Lake Erie, and wetlands. To say I was upset and shattered was a understatement.

I'm so sorry, but it gives me a good excuse to go back and make up for it.

This place is a peninsula that just out into Lake Erie for about 7 miles where you can do a full circle drive all the way around. As you drive 25 miles an hour through the park, there are little pulloffs to stop and look at the lake, or get out your bicycle to bike on the trails that hug the lake, or just stroll through the paths.

There were rental shops for bicycles, kayaks, canoes, tandem bicycles, golf cart bicycles (not sure what these are called but that’s what it looks like).

I would have loved to break out the bike, but it was getting late and I didn't want to drive in the dark to my overnight spot.

If you're every in Erie, Pennsylvania or just nearby, you must visit Presque Isle State Park. You'll be glad you did. I think you could literally stay for a week and still have more to accomplish and enjoy.

There's also some eateries on the way in so you can stop for lunch or dinner.


I decided to stay at the Walmart just a couple of streets off of the Great Lakes Seaway Trail and just east of Erie, Pennsylvania.

Most of these places I end up staying at are on the Allstays app. The Allstays app showed this Walmart as being quiet, available for overnight, and not far off the main route and it was right.

Look at all that beautiful farmland and green around this Walmart. There's actually been quite a few Walmarts where the scenery is actually very nice and peaceful.

Lily was also very ready for her nightly walk as we rolled into Walmart and parked. It was such a nice grassy area too which she promptly rolled around in.

So by popular demand I show how I manage some vegan RV cooking in my tiny RV kitchen. It's a smaller kitchen than I've ever cooked in before, but I make it work.

Having an Instant Pot for one-pot-meals and an indoor grill makes a huge difference.

In an RV, there is a constant maintaining of power intake and consumption if you are doing more boondocking or dry camping. I do both and rarely stay in RV parks where you plug in to shore power.

On my RV I have 720 watts of solar and 4 AGM batteries, a Magnum 2000 Watt Pure Sine Inverter as well as a battery monitoring kit and charge controller. There's a lot of information in that one sentence which I will go into in a later post.

Suffice to say, I need to make sure that my power consumption doesn't trip my inverter by pulling too much power at once. For example I can only run the Instant Pot by itself, or the Cuisinart Grill by itself, but never together.

Each draws over 1500 watts of power and together that would go over my 2000 watts for the pure sine inverter.

Now that you know all of that energy information – I cooked my jasmine rice first in the Instant Pot and while that was cooking I cut up my vegetables to make a grilled vegetable rice bowl and a side salad of cucumbers, avocado, and tomato.

I could tell my Instant Pot had gotten up to pressure because I showed a “net” +4.6 amps of solar power coming into the batteries. Usually when I have the Instant Pot on and it's getting up to pressure it will draw a negative (-) 90+ amps net.

Now I can turn on my grill and start grilling the zucchini, squash, and onions.

So as you can see I make it work and still eat healthy in my RV. It's pretty easy actually to eat healthy with some vegan RV cooking.

    1. Lisa I’m in L-O-V-E with my Instant Pot! I’ve had it for years and it makes cooking so easy and taste really great. I’m not an elaborate cooker. I mean I can be, but I don’t, especially in the RV with trying to conserve water, energy, etc. So one pot meals in the Instant Pot are wonderful. Yes, beans are cooked from dry. I don’t even take the time to soak them – again to save water. In fact today I’m going to cook a black bean soup. 🙂

  1. Sounds great! You’ve convinced me. I made a salad today that is black beans, avocado, onions and grape tomatoes w/seasoning and lemon juice. Very yummy.

    1. Lisa that sounds yummy and very balanced with veggies and healthy carbs that fill you up! I must admit I’m in love with avocados – well and Mexican food, so I often have something that has avocado, rice, beans, and my favorite pico de gallo on it.

        1. I have the larger one, but only because it’s what I had in my house. I really could use the smallest, especially being in the RV, but I didn’t want to purchase it again and fits in the RV just fine for now.
